Ingrediënten 1 cake:
• 200 gr boter, op kamertemperatuur
• 200 gr witte basterdsuiker
• rasp van 1 citroen
• ¼ tl zout
• 4 eieren, op kamertemperatuur
• 250 gr bloem
• 2 tl bakpoeder
• 60 gr yoghurt
• 150 gr blauwe bessen
• 125 gr poedersuiker / 1 el water

1. Verwarm de oven voor op 175 °C en bekleed een bakvorm met een stuk bakpapier en smeer de randen in met roomboter.
2. Doe de boter, basterdsuiker, citroenzeste en het zout in een kom en klop dit enkele minuten romig.
3. Voeg vervolgens de eieren één voor één toe, waarbij je het volgende ei pas toevoegt als het vorige volledig is opgenomen. Spatel de bloem en bakpoeder door het beslag en meng er tot slot de yoghurt door heen.
4.Voeg 1 eetlepel bloem toe aan de blauwe bessen en zorg dat ze rondom bedekt zijn met bloem. Schep de blauwe bessen door het beslag en giet het in de vorm
5. Maak het glazuur door de poedersuiker met water te mengen tot een vloeibaar glazuur. Besprenkel de nectarine cake met het glazuur en bestrooi dit met de amandelschaafsel.
